VEGETABLE SEEKH KABAB Ingredients 1 medium carrot, finely chopped 6-8 French beans, finely chopped ¼ cup finely chopped cabbage ¼ cup frozen green peas 2 medium potatoes, boiled, peeled and mashed 1 tablespoon oil + for greasing ½ teaspoon caraway seeds (shahi jeera) 1 inch ginger, finely chopped 1-2 green chillies, finely chopped ¼ teaspoon turmeric powder Salt to taste 1½ tablespoons gram flour (besan) 1 tablespoon cashewnut powder 3 tablespoons breadcrumbs ½ teaspoon crushed black peppercorns ¼ teaspoon green cardamom powder ½ teaspoon garam masala powder Fresh mint sprigs for garnishing Method 1. Heat oil in a non-stick pan. Add caraway seeds and sauté till fragrant. Add ginger and green chillies and sauté for 30 seconds. 2. Add carrot, French beans, cabbage and green peas and sauté for 2-3 minutes. Add turmeric powder and salt, mix and cook for 1-2 minutes. Transfer on a plate and slightly cool. 3. Coarsely grind the sautéed vegetable mixture. 4. Heat the same non-stick pan. Add gram flour and sauté till fragrant. Add cashewnut powder and sauté for 1-2 minutes.
