KIMCHI ROAST CHICKEN Ingredients ½ cup ready-made kimchi 1 whole chicken skinned and cleaned 4-5 garlic cloves 1 inch ginger roughly chopped 1 spring onion cut into 2 inch pieces Salt to taste Crushed black peppercorns to taste Oil for drizzling Glaze ½ kimchi liquid 2 tbsps honey To serve Method 1. Finely grind kimchi garlic ginger and spring onion. 2. Vertically cut the whole chicken in half without cutting it through. And trim the wings 3. Sprinkle salt on both sides of the chicken add crushed black peppercorns. Transfer the chicken into a large bowl. Add the ground paste and rub it well on all the sides of the chicken. Set aside to marinate for 1 hour. 4. Preheat the oven at 200ºC. 5. Transfer the chicken on a wire rack placed over a shallow baking tray. Drizzle oil and place it in the preheated oven for 15-20 minutes. 6. To make the glaze mix kimchi liquid with honey in a bowl. 7. Remove chicken for oven and sprinkle white sesames seeds and cut into pieces 8. For plating add mashed potato add roasted chicken chopped spring onion greens kimchi and garnish with micro greens.
