MUSHROOM WALNUT CROSTINI Ingredients 8 baguette slices 6-7 button mushrooms, sliced ¼ cup coarsely crushed walnuts 30 grams Emmenthal cheese, cut into thin slices 1 tablespoon olive oil 1 tablespoon chopped garlic 1 medium onion, finely chopped Salt to taste Crushed black peppercorns to taste 2-3 fresh thyme sprigs Mixed micro greens (mustard, amaranth and green peas) as required Method 1. Preheat oven to 180° C. 2. Place baguette slices on a baking tray and put 2-3 emmenthal slices on each slices. Put the tray into the preheated oven and bake till the cheese melts. 3. Heat olive oil in a non-stick pan. Add garlic and sauté for 30 seconds. Add onion and sauté till translucent. 4. Add button mushrooms and sauté for 1 minute. Add salt and crushed peppercorns, mix and cook till mushrooms are golden brown. Add fresh thyme leaves and mix, Add walnuts and mix well. 5.
