One of the winning recipes from the Doctor's Recipe Contest. Dr. Shubhangi Sudhir Men - Stuffed Methi Paneer Tikki STUFFED METHI PANEER TIKKI Ingredients 1 large bunch fresh fenugreek leaves (methi) ¾ cup grated cottage cheese (paneer) 1 cup gram flour Salt to taste ¼ teaspoon turmeric powder 1-2 green chillies, finely chopped 2 tablespoons hot oil Oil for shallow-frying Method 1. Finely chop fenugreek leaves and place in a bowl, reserving some for later use. 2. Add salt, gram flour, turmeric powder and green chillies to the bowl and mix well. Add hot oil and sufficient water, mix well to make a batter. 3. Heat a non-stick pan. Add the prepared batter and cook till the mixture comes off from the sides, mixing continuously. 4. Add the reserved fenugreek leaves, mix well and cook well. Transfer on a plate and cool. 5. Heat some oil in a non-stick pan. 6. Divide the cooked fenugreek mixture into equal portions, flatten a little, make a dent in the centre, stuff with some cottage cheese and shape them into tikkis. 7. Place the tikkis in the pan and shallow-fry till golden from both the sides. 8. Serve hot.
