BAGEL BREAD Ingredients 2½ cups refined flour + for dusting Butter for greasing 1 tablespoon fresh yeast 1½ teaspoons castor sugar Salt to taste 1 egg Poppy seeds for sprinkling White sesame seeds for sprinkling Black sesame seeds for sprinkling Method 1. Preheat oven at 180ºC. Grease a baking tray with some butter and dust some flour. 2. Dissolve fresh yeast in 2 tablespoons water alongwith ½ teaspoon castor sugar and heat in the microwave for 10 seconds. Set aside to activate. 3. Sieve refined flour in a bowl. Add salt and remaining castor sugar and mix well. Add activated yeast and mix well. Add some water and knead into soft dough. 4. Dust a worktop with some flour, place the dough and stretch it. Dust a bowl with some flour, place the dough, cover with a damp muslin cloth and set aside to prove for 25-30 minutes. 5. Dust the worktop with some flour, place the dough and knead again. Divide the dough into 4 equal portions. 6. Dust palms with some flour, take each portion and shape them into balls. Cut few balls from the centre using a small cookie cutter, place them onto a greased baking tray. 7. Take remaining balls, stretch to make long dough, criss-cross to seal edges and shape into a roundel. Place them onto a greased baking tray, cover with damp muslin cloth and prove for 10-15 minutes. 8. Heat some water in a non-stick pan. Add salt and bring to boil. Add bagels and poach from both sides for a minute. 9. Dust a baking tray with some flour and set aside. 10. Remove bagels from water and cool. Transfer them onto a baking tray. 11. Break egg into a bowl and whisk well. Brush some egg mixture over bagels, sprinkle some poppy seeds over 2 bagels. Sprinkle some white sesame seeds and black sesame seeds over remaining bagels. 12. Place the baking tray in preheated oven and bake for 15-20 minutes. Remove from heat and cool. 13. Serve.
