Here are the yummy kebabs made specially for the vegetarians who love paneer! π± Lovely paneer cubes marinated in a flavourful marinade featuring fresh coriander πΏ impresses everyone's tastebuds alike making it a perfect party starter! π
DHANIYA PANEER KABAB
Ingredients
500 gms cottage cheese (paneer) cut into 1 inch cubes
1 tbsp coriander seeds
1 tsp cumin seeds
1 inch ginger
3-4 garlic cloves
1 cup roughly chopped fresh coriander leaves
2 green chillies
Salt to taste
1 lemon
2 tbsps hung yogurt
5 tbsps extra virgin olive oil
A few cherry tomatoes
Few onion rings
Few lemon slices
Few thin strips of red capsicum
Method
1. Grind together coriander seeds cumin seeds ginger garlic fresh coriander leaves green chillies with a little water to a fine paste.
2. Transfer into a bowl add salt juice of 1 lemon and mix well. Add hung yogurt and mix well. Add 2 tbsps extra virgin olive oil and mix well.
3. Add cottage cheese cubes and mix well and set aside to marinate for 15 minutes.
4. Heat the remaining extra virgin olive oil in a non stick pan. String cottage cheese cubes and cherry tomatoes alternatively on skewers and place them in the pan. Cook rotating the skewers from time to time till the cottage cheese gets cooked evenly all around.
5. Serve hot garnished with onion rings lemon slice and thin strips of red capsicum.
