Fresh green garlic adds a light flavour to these pearl millet pancakes and is interestingly served with sweetened yogurt.
LILU LASAN NU CHAMCHAMIYA
2 cups pearl millet flour (bajre ka atta)
1 tbsp finely chopped green garlic bulbs
1 tbsp finely chopped green garlic stalks + for garnish
1 tsp ginger-green chilli paste
½ tsp cumin seeds
Salt to taste
A pinch of baking soda
2 cups buttermilk
Ghee for brushing + for drizzling
White sesame seeds for sprinkling
Sweetened yogurt to serve
1. Take pearl millet flour in a large bowl add green garlic bulbs green garlic stalks ginger-green chilli paste cumin seeds salt and baking soda. Add buttermilk and mix till a smooth batter is formed.
2. Heat a non-stick tawa. Brush some ghee on it pour small portions of the batter on the hot tawa and spread it into small discs. Sprinkle some white sesame seeds on each disc. Drizzle some ghee on top and sides of the discs. Cook on medium heat for 2-3 minutes.
3. Flip each disc and cook the other side for 2-3 minutes as well.
4. Transfer the discs on a serving plate garnish with green garlic stalks and serve hot with sweetened yogurt.
