LACHCHA ALOO PAKODA
Ingredients
4 medium wafer potatoes peeled
2 tbsps rice flour
1½ tbsps corn flour
1 tsp red chilli powder
½ tsp turmeric powder
Salt to taste
½ tsp carom seeds (ajwain)
1 cup gram flour (besan)
Oil for deep frying
Green chutney to serve
Tomato ketchup to serve
Method
1. Thickly grate the wafer potatoes and transfer it into a large bowl filled with water. Rinse it thoroughly. Drain the grated potatoes and add into another large bowl.
2. Add rice flour corn flour red chili powder turmeric powder salt carom seeds and gram flour and mix till well combined.
3. Heat sufficient oil in a kadai. Gently slide in small portions of the mixture into the hot oil and deep fry on medium heat till golden brown and crisp. Drain on an absorbent paper.
4. Serve hot with green chutney and tomato ketchup.
KANDA BHAJIYA
Ingredients
3 large onion (kanda) sliced
Salt to taste
½ cup gram flour (besan)
¼ tsp turmeric powder
½ tsp red chilli powder
¾ tsp coriander powder
½ tsp cumin powder
1 green chilli chopped
2 tsps chopped fresh coriander leaves
Oil for deep frying
Tomato ketchup to serve
Green chutney to serve
Method
1. Take onions in a large bowl sprinkle salt and mix well. Set aside for 10-15 minutes.
2. Add gram flour rice flour turmeric powder red chilli powder and coriander powder. Add cumin powder green chilli and chopped coriander and mix till well combined.
3. Heat sufficient oil in a kadai drop in small portions of the prepared mixture using your hand and deep fry till golden brown and crisp. Drain on an absorbent paper.
4. Transfer on a serving plate and serve hot with tomato ketchup and green chutney.
